Located in Scarlet Hotel, among the old shophouses of the Chinatown district, Aria is a Sicilian-inspired rooftop bar that names cocktails after each of the owner’s loved ones). Alex Calabro, the owner of Aria and Casa Tartufo, demonstrates how he concocts the cocktails which hold special meaning for him: Laura and Maria.

Named after Alex’s sister, Laura is a refreshing after dinner cocktail that delivers a hit of caffeine. It is made using amaro verna, espresso, simple syrup and burnt orange. The other cocktail he shakes up is Maria; named after his mother, this one is specially made for the ladies’ night. Organic ingredients such as lemon juice, aperol, Aria’s limoncello, crawleys burnt orange and vanilla are mixed, together with a strong shot of highwest peach vodka. If you are a sucker for all things organic, you would be happy to know that all ingredients used in the making of drinks here, such as the lemons and mint leaves you see in the clip, are grown from their own herb garden.
Some of the other cocktails served at the roof bar are Nicoletta (a take on the classic mojito that mixes Caribbean white rum, citrus, homemade pistachio and rosemary syrup) and Tammy (a floral, Vermouth-based cocktail which incorporates fresh jasmine from their herb garden), named after Alex’s daughter and wife respectively.
Aria touts itself as the largest rooftop bar in the Ann Siang enclave, with enough capacity to host a party for 50 to 200 guests. The unique cocktails are one thing; guests would also be in a prime spot to admire the mash-up of terracotta roofs of Chinatown shophouses, set against Singapore’s modern skyline and the CBD surroundings. Below Aria Roof Bar at Scarlet Hotel, the Casa Tartufo restaurant serves northern Italian small plates and mains, from fried Palermo street snacks and fresh ocean catches to Prosciutto and squid ink tagliolini.
